Have you tried eating the “Forbidden rice”? No, it isn't a fictional kind of rice which you can read only in story books and contains poison. Forbidden rice is a kind of short-grained and heirloom rice which is black when uncooked and turns dark purple when cooked.

So why is it called the “Forbidden rice”? One explanation is that it may be a kind of rice reserved for Chinese emperors in ancient times. It was exclusive for royalties because of its rarity and nutritiousness. On the other hand, some believe that they were banned by the Greeks when they ruled over the Middle East in their fear of the enemies using them as aid in battle. Meanwhile, the most modern and simplest explanation is that it is just a part of a brilliant marketing strategy.

However, when it comes to the Indian culture, rice is never forbidden. In fact, it is part of most meals. Indian rice recipes are a must in every Indian table and household. Rice recipes are often with special ingredients in them such as tamarind, curd and black pepper. One of the commonly used rice species is the Basmati rice. Rice can also be served with Podis, a kind of flavoring. In some Indian occasions, the Pulao dish is popular with its vegetables, meat, and spices.

An example of a simple Indian rice recipe is rice with mustard seeds. The ingredients you will need are two cups of long grain rice, one teaspoon of mustard seeds, ½ teaspoon of fenugreek seeds, ¼ cup of ghee or oil and three-and-a-half cups of water, plus salt.

First, you must pick through and wash the rice. Then, heat the mustard, ghee and fenugreek seeds in a large pan until they splutter. This can bring out the flavor of the seasonings. Next, you have to add rice and coat, as well as water and salt. When the rice boils, the heat must be lowered. Wait until it is fully cooked.
